Protein Pizza Muffins

This is currently my favorite Beachbody recipe! I'm back in the swing of P90X, so nutrition is of utmost importance for refueling. This pizza muffin recipe is perfect for an afternoon snack or for a meal to watch your portion control.

1 whole-grain english muffin
tomato sauce
mozzarella cheese
grilled chicken, sliced
Italian seasoning

1. Slice the english muffin and lay flat on a nonstick baking sheet.

2. Top with tomato sauce, seasoning, chicken and cheese to personal preference.

3. Bake at 350 degrees for 10 minutes, until cheese is browned.

You can always play around with the toppings for this recipe. This week Danny made them with BBQ sauce and different cheeses, plus your choice of spices can make all the difference. I used leftover chicken that I cooked with onion powder, paprika, rosemary and course black pepper...yummy! Have fun experimenting!
