Peanut Butter Cheesecake Cookie Cups

One of the anniversary gifts I made for Danny this week was a pan of peanut butter cheesecake cookie cups. They’re so easy, and you could honestly mix and match any combination of cookie and fillings you like. Try this match up and then let me know what flavors you made for your own.

You’ll only need three things to make this version of these adorable treats: a package of peanut butter cookie dough (the kind cut into 24 squares), a container of cheesecake filling and some pretty decorations.

Preheat the oven to 350 degrees and lightly spray a 24-cup mini muffin tin with nonstick spray. Each cup gets a piece of cookie dough, and you need to make a thumbprint right in the middle.

Bake these for 9-10 minutes, until the edges are browned and hold their shape. Put the whole pan on a wire rack and let cool for 5-10 minutes. Then they’ll be easy to remove.

Now comes the fun part - filling and decorating! Spoon the cheesecake filling into the cups and sprinkle them with your favorite sprinkles. (You do have favorite sprinkles, don’t you?) Then theey’re ready to enjoy.
