Roasted Red Pepper Hummus

When I first heard about hummus it seemed like some fancy-schmancy food that only vegetarians or lovers of organic foods would eat. It wasn't until I tried it at a local pizza place that hummus became a staple on my favorites list.

Ingredients:
one 15.5 oz can of chickpeas (garbanzo beans), drained
6 oz (1/2 jar) roasted red peppers, chopped slightly
1 tbsp chopped garlic
1 tsp paprika
2 tbsp onion powder
1 tbsp course-ground black pepper
1/4 cup extra-virgin olive oil
pita bread for dipping

Combine first six ingredients in a food processor until smooth. Slowly add in olive oil.

Refrigerate at least one hour before serving, or until firmer consistency.

Serve with slices of pita bread, preferably toasted.
