White And Dark Chocolate Trail Mix Bites
All you'll need is a bag of your favorite baking chips - I used vanilla chips and dark chocolate chips for these - and a package of trail mix. Yes, it's really that simple.
Pour a third of the bag of chips into a microwave-safe bowl. You'll heat them up 20 seconds at a time in the microwave, stirring each time.
While the chips are melting away, cover a cutting board or baking sheet with parchment paper. This is an incredibly important tip, so don't forget.
Once they're all melted and smooth, spoon the chocolate into small dollops across the parchment paper. They should be thick enough to not run all over the place. Quickly add a few pieces of nuts and fruit from the trail mix to the top of each one before the chocolate begins to harden.
Place the entire board into the refrigerator for about half an hour, or until they're cold and solid. Store them in an air-tight container in the refrigerator. Then you can pack a few for dessert or a snack as you need them.
