Cinnamon Spice Cookies From A Cake Mix

Do you have a cake mix in your pantry right now? How about a little butter and a couple of eggs in the refrigerator?

If so, you have the makings of an incredible cookie.

That's right - not a cake, but cookies.

Starting your cookie baking with a cake mix, butter and eggs means you'll be finished quickly and have time left over to enjoy the fruits of your labor. Cookies of your labor. Something like that.

Ingredients:
1 boxed cake mix (I used spice cake)
1/3 cup melted butter
2 eggs
1/2 package baking chips (I used cinnamon chips)

1. Preheat oven to 350 degrees. Lightly spray a baking sheet with nonstick spray.

2. Mix cake mix, butter and eggs in a large bowl. Roll into balls and place nine on the cookie sheet.

3. Gently press the chips into the top of each ball, flattening it slightly.

4. Bake at 350 degrees for 7-8 minutes. The bottom edge will be slightly brown and the top will bounce back if you touch it.
