Pasta with Turkey Sausage and Veggies


Are you looking for a simple, quick recipe for this week before Christmas? Here's the solution when you have many mouths to feed, no time and little energy! The whole meal takes about 20 minutes to make and is incredibly satisfying.


Pair it with some fresh fruit and with a little dessert to follow. There will only be two pans to clean and you can move on to the rest of your evening.

Pasta with Turkey Sausage, Broccoli and Peppers:
1 lb whole wheat penne
salt
1 1/4 coup broccoli florets
3 tbsp olive oil
4 links turkey sausage
1 cup jarred roasted red peppers, chopped (or red and yellow combination)
2 tbs chopped fresh parsley
1/8 tsp crushed red pepper

1. Cook pasta as directed. Add broccoli for the last 3 minutes. Drain.

2. Brown sliced sausage in 1 tbsp olive oil over medium heat, 10-12 minutes.

3. Return pasta and broccoli to pot, add sausage, red peppers, oil, parsley and crushed red pepper. Toss to combine.
