From-Scratch Pecan Waffles

Anybody can pull a box of mix out of the pantry and whip up some waffles, right? They'll taste pretty good, especially when they're swimming in syrup. You might even add some fruit to the top and sprinkle them with powdered sugar.

But what if I told you that with just seven ingredients and some pecans, you can make waffles from scratch that are dense, tasty and perfect without adding anything to them at all? Curious? Then let's begin.

Ingredients: 
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil
2 cups flour
3 tsp baking powder
1 tsp sugar
1 pinch salt
Pecans - halves + 1/2 cup chopped

1. In the bowl of a stand mixer, add eggs, milk and oil. Mix on medium speed until completely combined and smooth.

2. Add flour, baking powder, sugar and salt, then mix on medium-high speed until combined. Mix in 1/2 cup chopped pecans.

3. Pour the mixture into your waffle maker by the ladle-full. This amount made four large waffles in my hotel-style waffle maker. Serve topped with pecan halves, and syrup and powdered sugar, if desired.
