BBQ Pulled Pork Skillet Nachos

There’s no more perfect game day snack than nachos ... unless it’s nachos that turn into an entire meal.

Whether you plan to watch the Super Bowl next week or have another sporting event you’re looking forward to, grab your largest cast iron skillet and a few fun ingredients to make your own skillet nachos - in this case topped with BBQ pork!

For our nachos, we used a container of BBQ pulled pork already saucy, large round tortilla chips, whole kernel corn, mango peach salsa, shredded Mexican cheese blend and sour cream. You can adjust this list to suit your taste, which is half the fun!

Preheat the oven to 400 degrees while you make your beautiful creation. Spray the bottom of your cast iron skillet with nonstick spray, then begin your layers. I used most of a big bag of chips in the bottom, then a couple of handfuls of cheese and dollops of salsa. The next layer was the pulled pork, followed by more cheese and salsa. Repeat as necessary! 

The whole skillet goes in the oven at 400 degrees for 5-6 minutes, until the cheese is all melted and gooey. We finished it off with more salsa and sour cream. They were so warm and lovely, and the cheese between the layers makes sure there are enough toppings for all the chips.
