Slow Cooker Cheeseburger Soup

Ok, so this recipe is amazing on so many levels.

Level 1: It’s hot in Iowa right now, so not cooking is a wonderful thing.

Level 2: Our schedules are so busy right now that not having to cook is a wonderful thing.

Level 3: Soup is a wonderful thing to begin with.

Level 4: I’m not a big burger fan in general, but I would eat a bazillion of them if they tasted as good as this soup does.

Level 5: Danny loved it, so it’s definitely a keeper.

Ingredients:
2 lb ground beef, browned
1 large onion, diced
2 12-oz cans diced tomatoes
1/2 cup steak sauce
1 16-oz package sliced American cheese, torn into pieces
1 cup shredded lettuce
Tortilla strips

1. Combine ground beef, onion, tomatoes and steak sauce in a large slow cooker. Cover and cook on low setting for 7-8 hours.

2. Stir in cheese chunks and stir to combine. Cover and change setting to warm for 5-10 minutes. Cheese will melt - stir to combine.

3. Serve with a sprinkle of lettuce and tortilla strips to garnish.
