Fiesta Chicken And Rice Skillet

Some evenings it's nice to not have a lot of cleaning up to do after dinner. This one-dish meal only uses one skillet, and you'll have enough for leftovers the next day for lunch. It's a win-win situation.

Ingredients:
4 servings brown rice, cooked
4 Tbsp olive oil
4 chicken breasts, thawed and diced
1 Tbsp cumin
2 Tbsp cinnamon
1/4 cup honey
1 16-oz jar salsa

1. Prepare four servings of brown rice according to package instructions.

2. Heat olive oil in a large cast iron skillet. Season with cumin and cinnamon.

3. Pour honey over chicken and stir, allowing it to caramelize.

4. Stir in salsa and cooked rice. Heat through.
