Bell Pepper and Tomato Salad

This refreshing summer salad is fabulous on its own as a side dish. We've also had lovely results this week mixing it with chopped-up chicken and chicken Parmesan. Not only is it super easy, it's also incredibly tasty and versatile.

Ingredients:
1 each yellow, red and green peppers, chopped into bite-sized pieces
2 cups halved cherry tomatoes
1 cup zesty Italian salad dressing

1. Chop the peppers.

2. Halve the tomatoes.

3. Combine them in a bowl.

4. Add the dressing and mix well.

5. Refrigerate for at least a few hours before serving. This will give the dressing a chance to really sink in.
