Lemon Butter Chicken Tenders
Have you ever found something in the refrigerator or pantry that you forgot you had and it was a little like Christmas? You immediately pulled it out, found some other ingredients, and enjoyed it right then and there?

If the answer was yes ... isn't it the most wonderful feeling? Sometimes it's all the creative spark you need to come up with a whole new meal or recreate a favorite.
For me this week, it was these big, fat, lovely chicken tenders. With just four more ingredients that I already had on hand, and you probably do too, these lemon butter bites came together in a matter of minutes.
Olive oil
Chicken tenders
Chicken seasoning (I used Blues Hog's Rodeo Rub)
Lemon juice
1/4 cup butter
1. Heat olive oil in a large skillet over medium-high heat. Rinse the chicken and pat it dry.
2. Shake chicken seasoning over one side of the chicken tenders and place in the oil. Season the top side. Brown the first side 3-4 minutes.
3. Flip the chicken and drizzle a small amount of lemon juice in between the tenders. Continue to brown the second side, 3-4 minutes.
4. Flip the chicken again, add another drizzle of lemon juice between the tenders if the skillet is getting dry, and add a small pat of butter to the top of each tender. It will melt down into the oil and lemon juice within a minute or two to create a little pan sauce.
5. Flip the chicken one last time, swirling each tender in the butter sauce. You'll now smell the citrus in the sauce. Serve with past and veggies or slice it up and make street tacos. Whatever your meal, you can't go wrong!
