Baked Hot Honey BBQ Chicken Tenders

Have you ever wondered what's in the back of your freezer or at the bottom of your deep freeze? A cold-weather expedition may be in order! I went looking in ours and found 3 pounds of chicken tenders that I forgot existed. 

The ensuing recipe hunt brought me to something I love to eat but usually don't love to do: hand-breaded chicken. I don't know why I don't enjoy setting up and using a breading station, but this one wasn't bad at all. I think the smell of the Panko (which I love in sushi!) may have made the difference.

I also like making my own sauces, and this is a good one. Danny loves to try all the hot honeys out there on the market, so we had a couple of really good ones to choose from. If you don't have any in your own pantry, you can always use a few teaspoons of honey and a teaspoon or two of sriracha. 

Ingredients: 
3 lbs chicken tenders
1 cup buttermilk
1 box Panko breadcrumbs
1 cup all-purpose flour
2 Tbsp garlic powder
2 Tbsp smoked paprika
salt and pepper
1 cup honey BBQ sauce
2 Tbsp hot honey
1 tsp ground ginger

1. Rinse the chicken tenders and place them in a bowl with the buttermilk, coating completely. Put in the refrigerator for 20-30 minutes to soak up the buttermilk.

2. Preheat oven to 425 degrees. Stand a wire cooling rack on a large baking sheet with sides and spray with nonstick spray.

3. Set up two bowls for dredging the chicken - one with flour and one with the Panko, garlic powder, paprika, salt and pepper.

4. Each chicken tender gets a coating of flour, more buttermilk, and the Panko mix. Lay the coated tenders on the rack so they'll drip onto the baking sheet. Spray the tops lightly with nonstick spray so they'll turn golden brown and not burn.

5. Bake at 425 degrees for 16-18 minutes, until the breading is crispy and the chicken is cooked completely.

6. In a small bowl, mix the BBQ sauce, hot honey, and ginger. Drizzle the sauce over the chicken tenders as you serve them. (If you're planning on leftovers, don't drizzle the sauce on any you intend to keep for the next day. They'll get soggy.)
