Chocolate Chip Oatmeal Bars

There's nothing like chocolate chips to get you out of a baking drought. Just like last week's ground beef and sweet potato skillet jumpstarted my love for cooking again, these bars helped me remember why I love baking so much.

Because I love eating the finished product!

Getting back in the groove in the kitchen has been difficult for me for over a year, but these short, simple recipes are making all the difference. One step toward normal makes a huge difference in your mind and heart, and if yummy chocolate chip oatmeal bars are that step, I'll happily take it.

Ingredients:
  • cups quick cooking oats
    1 teaspoon baking powder
    1 egg
    1 cup peanut butter
    3/4 cup maple syrup
    1 Tbsp vanilla
    1 cup chocolate chips
    Salt, preferably flake

1. Preheat oven to 350 degrees. Line an 8x8-inch baking dish with parchment paper.

2. In a large bowl, combine oats and baking powder.

3. In a medium bowl, combine egg, peanut butter, maple syrup, and vanilla.

4. Pour liquids into dry ingredients' bowl and stir to combine. Add 1/2 cup of chocolate chips.

5. Pour mixture into baking dish and spread evenly. Top with remaining chocolate chips.
    6. Bake at 350 degrees for 30 minutes. Remove from oven and immediately sprinkle with salt. Allow to cool completely before cutting into squares.
